Our Guabancex Mamajuana Starter is a nod to the national drink of the Dominican Republic and our deity of turbulence and storms, Guabancex.
Guabancex also represents all destructive natural phenomena, including earthquakes, volcanoes and climate shifts. Guabancex reminds us of our vulnerability. So does a serving of mamajuana.
Each starter includes a blend of malagueta, clavos, madera Brazil, and ojas canelillas. They've been cured in red wine, honey, rum, and some of my familial stash which has been brewing for more than 30 years.
To fix your your bottle add your blend to a bottle of dark rum. Allow it to sit for at least one week. As long as you keep the blend soaked it will keep curing your rum. If you prefer your mamajuana sweeter you can add honey or raisins, but raisins will shorten the life of your blend.
Occasionally you might want to feed your blend with cheap red wine for a week. To do this you empty your bottle, then cover the blend with wine. After a week you dump the wine and reintroduce rum.
